Carob is rich in fibers, polyphenols, natural sugars, but is low in caloriesit is fat, gluten-free andcaffeine free. Carob is rich in vitamins A,B and D, calcium, phosphorus, potassium, carbohydrates, protein, magnesium, and various metals. It is consumed raw as a fruit. This is a dried product and therefore is naturally hard. Be careful with the hard pods, and the carat seeds should not be eaten. If you wish to soften the carob pods they may be soaked overnight in previously boiled water.
