Timing is central to Cretan Liquid Gold Organic. We hand-pick our Koroneiki olives in November as they begin turning from green to black, the stage known as veraison. We choose this moment to capture the balance of aroma and flavour we seek in our oil. This deliberate picking stage is a defining part of its character.

The November 2025 harvest offers notes of olive leaf, wild herbs and artichoke, followed by gentle bitterness and a clean, peppery finish. Certified organic and produced in limited quantities, this oil is never blended with oils from previous harvests.
