The November 2025 harvest delivers a beautifully balanced just ripening profile — notes of olive leaf, wild herbs and artichoke, with a clean peppery finish.
Experts recommend consuming premium EVOO within 12–18 months of harvest for peak polyphenol content and flavour. Fresh from the groves, this oil is at its absolute best right now.

Origin
Produced from organically grown olives in our sun-drenched groves of Crete, where ancient olive traditions and ideal growing conditions combine to produce oils of remarkable quality.

Harvest & Production
Carefully hand-harvested in November, when the olives are just turning from green to black. Olives are pressed within a few hours of harvesting, and cold-extracted to preserve freshness, aroma, and complexity. Certified organic and produced in small batches.
