Kalamata olives are a delicious, incredibly healthy snack. They are packed with antioxidants and are great as an appetiser, meze, or added to salads. Olives can also be added to stews and other dishes (such as pizza and pasta) but best to use the pitted ones for this.
We have two options in taste: a less bitter (standard, non-organic) and a more bitter, firmer type (organic). The extra bitterness in the organic means they have higher polyphenol levels and are therefore very high in antioxidants.
The organic and the standard jumbo olives are hand-picked in the private groves of Monemvasia and Sparta, respectively. The olives are then 'de-bittered' for 7 months (organic, more bitter) or 10 months (standard, less bitter) in sea-salt brine, without prior slitting (unlike some olives which are slit to speed up the process!). This means the flavour is completely preserved within the olive. The olives are then transferred to the extra virgin olive oil dressing and can be kept for months prior to opening. whole kalamata olives are presented in a luxurious dressing of Greek organic extra virgin olive oil with wild oregano, rosemary and red wine vinegar.
