    Harvested from our own selected groves in Northern Crete, in early October, at the very start of the season, when olives are still green and nutrient-dense.

    Ultra-early harvested in October, primarily from green olives, and immediately cold-extracted. This is a testing oil to produce - minimal yields, maximum intensity, produced with health-focused precision.
