Produced exclusively from Koroneiki olives grown in north-east Crete, the olives are hand-harvested in November, when the fruit is just beginning to ripen. This precise timing captures the olive at its most expressive — vibrant and aromatic, yet beautifully balanced.
Cold extracted within hours of picking, the oil delivers a fresh green profile with notes of olive leaf, wild herbs and artichoke, followed by a gentle bitterness and a clean peppery finish. The result is an olive oil of clarity and finesse, favoured by chefs for its ability to elevate simple ingredients.
