A delicious oil with a pale green gold colour, a fresh, herby leafy aroma, light and clean in texture, with pronounced pepperiness and a subtle bitterness towards the end
Superb quality: The acidity is very low (0.27%), with high polyphenols (>250mg/kg), which are natural anti-oxidants , meaning that it is not only a delicious oil, but a super healthy one too.
Ideal for dips and salads, but also one of the best oils to cook with - or, as my farmer said "this one is for drinking"!

What makes our green organic oil so special?
- The timing of the harvest: Olive harvesting most commonly takes place when the olives are just turning from green to black, or when they are all mostly black; the darker the olive the more ripe and 'fruity' it is. Riper olives produce much more oil than green less ripe oils, but the oil is of a very different quality
- The character and quality: Olive oil made from less ripe green olives (ie those picked very early in the season, in October) - like our green organic - is much harder to come by. Why? Because the trees need more care, less oil is produced (therefore it is more expensive to produce), but the extra effort and expense is well worth it: the oil is very much more aromatic, peppery, flavourful and has a longer shelf life than later harvest oils.
- The scarcity: As a result, most farmers in Greece keep this precious Liquid Gold for their own family's use, and it rarely reached the commercial market, and certainly hardly ever reached the UK market!
